Lemon Bar


  1. Preheat the oven to 350°F. Grease bottom and sides of 9 x 13 baking pan. Set aside.
  2. Crumb Base: In a large mixing bowl add cookie mix, melted butter, egg and milk. Beat until mixture forms a soft crumb texture. Press the crumb evenly into the bottom of prepared pan. Set aside and prepare the filling.
  3. Filling: Sift the sugar and rice flour together in a large bowl. Add the eggs and lemon juice and whisk until completely combined. Pour filling over prepared base.
  4. Bake the bars for 25-30 minutes or until the center is relatively set and no longer jiggles. Remove bars from the oven and cool completely at room temperature before serving.

 **Dust with confectioners’ sugar (optional) and cut into squares.



  • 1 package Cookie Mix
  • 1/4 cup butter, melted
  • 1 egg
  • 1 tbsp. milk       

Lemon Filling

  • 2 cups granulated sugar
  • ½ cup Duinkerken Rice Flour
  • 6 eggs
  • 1 cup pure real lemon juice (or use about 6 large lemons)
  • Optional: confectioners’ sugar for dusting
