Glazed Cranberry Loaf


  1. Preheat oven to 350 degrees F. Generously grease 8”x 4” loaf pan.
  2. In a medium sized bowl, blend muffin mix, eggs, oil, orange juice and orange zest. Stir in cranberries. 
  3. Pour the batter into the prepared pan.
  4. Bake for 50 – 55 minutes or until a toothpick inserted into the center of the loaf comes out clean. 
  5. Remove from the pan and cool on wire rack.

For glaze- Stir icing sugar in a small bowl. Drizzle over loaf!


  • 1 pkg Duinkerken Muffin mix 
  • 2 eggs
  • 1/2 cup orange juice
  • 1/3 cup oil
  • 1 rounded cup dried cranberry’s – chopped
  • 4 tsp. orange zest

For Glaze

  • 2/3 cup icing sugar
  • 1 tbsp. water
