Gingerbread Pancake/Waffle


  1. Heat pancake griddle to 375° F. Lightly grease griddle.
  2. Place all dry ingredients in a large mixing bowl and whisk to combine.
  3. Mix in milk, eggs, molasses, and oil, whisk until combined.
  4. Pour slightly less than ¼ cups batter per pancake onto griddle.
  5. Cook 1 to 1 ½ minutes per side. Flip when tops bubble and bottoms are golden brown. If making waffles, add mixture to waffle griddle and cook.
  6. Serve warm with Maple Syrup and top with whipped cream if desired.


  • 1 pkg Duinkerken Pancake mix
  • 1 1/3 Cups milk
  • 3 Tbsp Molasses
  • 2 eggs
  • 2 Tbsp oil
  • 2 Tsp Ground ginger
  • 1 1/2 Tsp Ground cinnamon
  • 1/8 Tsp Ground nutmeg
  • 1/8 Tsp Ground cloves
  • Maple syrup
