Cranberry Swirl Coffee Cake


  1. Preheat oven to 350 degrees F (175 degrees C). Grease 9 x 5-inch loaf pan
  2. In a large bowl, add muffin mix, eggs, lemon zest, melted butter and sour cream. Mix until well blended and batter is smooth.
  3. Pour 1/3 of the batter into prepared pan. Swirl 1/2 of the cranberry sauce into batter. Repeat, ending with batter on top.
  4. Bake in the preheated oven until golden brown, about 55 minutes.


  • 1 Package Duinkerken Muffin mix
  • 1/3 cup melted butter
  • 2 eggs
  • 1 cup sour cream
  • Zest of 1large lemon
  • 1 cup leftover cranberry sauce or 1 (8 ounce) can whole cranberry sauce
