Apple Cranberry Crisp


  1. Preheat oven to (325 F).
  2. Grease an 8″ square baking dish.
  3. For topping, combine cookie mix, eggs, and melted butter in a bowl. Mix well with large spoon or electric mixer on low speed.
  4. Use 1 ½ cups of the cookie crumb mixture.
  5. Mix in cinnamon. Work together with fingertips until crumbly. Stir in nuts and set aside.
  6. Toss the apples and cranberries with sugar, orange zest and juice.
  7. Spoon into prepared baking dish. Sprinkle topping evenly over the fruit.
  8. Bake until bubbly and apples are tender, about 30 minutes.
  9. Let cool slightly. Serve warm with ice cream or whipped cream if desired.

Note: remainder of cookie crumb mixture can be stored in covered container in the refrigerator for 1 week.


  • 1 pkg Duinkerken Cookie mix
  • 2 eggs
  • 1/2 cup melted butter
  • 1/2 Tbsp. ground cinnamon
  • 1/2 cup chopped pecans
  • 4 apples, peeled, cored and cut into 1/2” dice
  • 1 cup cranberries, fresh or frozen
  • 1/3 cup sugar
  • Zest and juice of 1 orange
